Homemade Baked Beans

Still eating Baked Beans out of a tin? Try this simple, tasty recipe and feel the difference!

This is a favourite in my house and so very easy, healthy and cheap to make. 

What you will need:

1 tub of tomato paste (140g)

1 leek

1 medium brown onion (or Spanish onion which is slightly sweeter)

1-2 cloves of garlic

1 can of *organic Cannelloni beans – rinsed, or 1 cup soaked over night

2 tsp of coconut sugar (optional – this balances the acidity of the tomato)

Stock 1.5 cups

2 sprigs of Thyme (or any fresh herbs like Tarragon, Basil, Parsley)

1 generous tbsp of Coconut oil (or cold pressed olive oil – or blend the two)

How to cook it:

Shallow fry the leek and onion in oil for several minutes, add a pinch of salt to sweat the onion

Add the tomato paste, crushed garlic and beans and stir through

Add stock and reduce the heat to a simmer for 30-45mins for the sauce to thicken

Once the sauce has thickened add the Thyme or fresh herbs to add more flavour and texture to the dish


This dish is a great accompaniment to meals, like fish, salad, eggs or as a snack in the afternoon. It is packed with flavour, fibre, complex carbohydrates and B vitamins for energy. Perfect for the whole family 🙂
